Why do we do low temperature pasteurize?
What is Low Temperature Pasteurization? This is the process of heating the milk up to the minimum temperature required by law. It is held at that temperature for 30 minutes.
Is Low Temp. Pasteurization healthier? Yes, it is. You see there are all kinds of bacteria living in milk and depending on the farmer, most of the bacteria is good. When the milk is pasteurized, it kills the bacteria off. The hotter you go, the more bateria is killed. By only heating to the minimum required temperature, we are preserving as much of the bacteria as possible. Bacteria that our bodies need to stay healthy.
I know you will be asking your self: why our milk is more money than the conventional milk? I will try to explain this to you as follow:
All our cows eat is mainly grass, what is organiclly grown, by doing this our production went down by 65%. We used to feed high powered diets: Lots of Corn, Soy bean meal, Citrus pulp, Distillers Grain, Cottonseed. Cows where producing a lot of milk, but cows where to be replaced every 2 1/2-3 years.
We hope with just taking it easy(not that high powered stress) our cows will be around for 6-7 years, but will not give a lot of milk. Quality of live for our cows in creased by 400% i would say.
Also the quality of the milk is a lot better when they are not under stress.
So if you have a milk product what moves 100,000 gallon a month in a big truck all over the Southeast or there is only going to be 26,000 gallon of milk in it, the cost are still the same.
